After washing the greens, before wrapping them in towel, should they be dried ?

For herbs such as cilantro, parsley, basil or dill – Fill a large bowl of water and move the herbs around in the water and release any sand or dirt. Repeat this until the water is clear of dirt. Then I let it drain of excess water for a few minutes. If you have a salad spinner you could use it for rinsing and to spin off excess water. Then wrap herbs in a dry towel and into a plastic bag or air tight container. The herbs will still have some water on them, but wont cause the towel to be very wet. The dry towel with slightly most herbs is key. Change the towel after a week.
