Horseradish Root is a perennial plant of the Brassicaceae family, which also includes mustard, wasabi, broccoli and cabbage. It is popular around the world, and it grows up to over four feet tall and is cultivated primarily for its large white tapered root.

The intact horseradish root hardly has any aroma. However, when it is cut or grated the enzymes from the plant breakdown and produces a strong pungent smell. Grated root should be used immediately or preserved in vinegar for the best flavor. Once exposed to air or heat it will begin to lose its pungency and will darken in color and become unpleasantly bitter tasting over time.

Horseradish can be used as an ingredient in dishes or to create a variety of spicy dips and sauces.
