Ginger produces a hot fragrant kitchen spice. Although often called ginger root it is actually a rhizome. A piece of the rhizome, called a ‘hand’, has a pale yellow interior and a skin varying in color from brown to off-white. Fresh ginger can be kept for several weeks in the salad drawer of the refrigerator.

Another storage suggestion is to clean and trim the Ginger. Cut into small pieces and put in a food processor – chop lightly. Then place chopped pieces on a cookie sheet and freeze. Put frozen chopped Ginger in zip lock baggies, return to the freezer to then have ready for each use in the quantity desired.
