I have always loved cream of tomato soup. When I was a kid I loved to put cheese and crushed ritz crackers in it. Well, dinner last night hit the nostalgia button with a grown-up twist. I made the soup as directed, but then put a dollop of pesto on top and served with the new grilled cheeze sandwich that I added pesto to. Lots of Mmmm mmmm mmmm’s as I dunked my sandwich and enjoyed every drop of soup in my bowl!
This soup is great. I have missed the tomato soup I grew up with but now I have a way to make tomato soup that satisfies my taste buds.
