  1. I just made this and it was good. For my tastes, though, the next time I make it, I will use the Whipped Miracle Sandwich Spread for the dressing. The other thing I did was I sprinkled it with just a “touch” of India Black Kala Namak Salt, which has a sulpher or egg smell and it made a big difference in the taste. You don’t need much 🙂

  2. I absolutely LOVE this salad. Macaroni salad was my favorite food most of my life, and this is almost spot on as far as having the same taste. Slight taste of tofu, but barely noticeable. I make this about ever other week, and living alone it lasts me almost a week. LOVE LOVE LOVE!

  3. I finally made this recipe. Great summer salad.
    When I served it, I had some pesto sauce leftover so spooned a little in it. Moistened it up and gave it another layer of flavor. Try it! Thanks again for making such delicious meals.

  4. This will be one of my weekly dishes, love it and who would even know there was no mayo. It was a little dry when I first put it together so I added more soy milk which then gave it that creamy macaroni salad texture. I also diced up all my veggies, next time I will use the peeler for the carrots so the orange color will be more prominent. Can’t wait to bring this to a gathering for others to see that eating healthy can taste great! 🙂

  5. great summer treat, i just made this with different veggies, celery, green onion, green pepper, and lightly sauteed some mushrooms and zucchini. added some small grape tomatoes for color.
