Minestrone in Italian means a big soup. A big pot of soup is perfect for stocking up your fridge and freezer with ready to go meals. It’s a great way to get kids to eat veggies. Start with the base of the soup as your guide, and then use the suggested veggies or whatever you have on hand to turn out one of the best Italian style veggie bean soups created.

Julie, I’ve been making minestrone soup just by tossing in this and that for absolutely years, but I guess besides a couple herbs I might not have included in mine that you added, incorporating nutritional yeast makes this soup over the top tasty. Best ever. 5 out of 5. If others haven’t tried it, they should!

Great soup! I have to tell you that my husband has never given anything I’ve made a 10. He says “what if something REALLY good came along and I already gave out the top number?” (I always say he could give me lots of 10’s…. ) So when I made this and we also had the leftovers the next day, he was so excited. 9.95!! I am making it again right now!

This soup really hits the spot. It is warm and gives you that “all is ok in the world ” feeling. I eat it every week. It also freezes really well

I have been trying to make a good minestrone soup for ages. This is the recipe! The difference between my ok soup and this one are the spices and nutritional yeast. The recipe is huge so I cut it in half. No problem. It is a good way to use up bits and pieces of left over this and that.

Really good. When I make it again, though (and I will), I’ll probably use a more substantial noodle other than spaghetti–maybe penne.
