This fresh salad is even better than my memories of the full fat original. It is complete with easy to make faux feta cheeze. Stuff this into a Protective Diet Soft Pocket Bead and turn this simple salad into a lunchtime favorite.

I added parsley, oregano & olive juice to my feta cheese to help get rid of the tofuey taste. I love, love, love this salad & the dressing! All so good!

This salad is amazing, and that’s coming from someone who has never liked olives! The dressing is SO good. I had this for both lunch and dinner today!

where do you get Pearl’s brand olives?

I have found them at all the major grocers. In Chicago they are available at Jewel and Walmart. Trader Joes also carries natural cured olives under their own brand. Read the label and look for only three ingredients – olives, water and salt.
