Lentil Stew Free PD Recipe

  1. Lentil Stew is a great 1 pot cooking dish. I made it in a pot on a wonky 2 burner stove in a hotel. Despite the erratic heat of the stove it came out perfectly. This would make a great dish for cold weather camping- nice and hearty. You could either make it fresh on site or pack the stew already made and heat up on a camp stove. Considering how sturdy the ingredients are I would just pack them. If you really wanted to save you could pack them all chopped. I just packed up the measured spices for the stew in a jar to bring to the hotel. If you follow the directions for PD perfect brown rice you will be good to go with minimal effort. If rice uses one pot too many for you tortillas would be good with this.

  2. Do you have a timeline if cooking this recipe without a pressure cooker? We can’t afford to purchase one right now, and I just use my old Dutch Oven for most soups and stews. Thanks!

    1. Susie, I would bring it to a boil, cover and turn down to a simmer for approximately 40-45 minutes or until lentils are tender. More liquid evaporates on the stove top than in the pressure cooker. If more liquid is needed add water or additional broth.

  3. This is a great, hearty stew perfect for cold fall & winter days. It makes a big batch and keeps well. I didn’t have any smoked paprika left, so I used hot paprika and a bit of liquid smoke. Delicious!

  4. Quest? Do you brown the onions and garlic in a separate pot or the pot of the pressure cooker? BTW, I noticed that the pressure cooker you use is not nonstick, how do you keep things from sticking? I have a rice cooker with a non-stick finish and was wondering if it can be used in place of your pressure cooker?

      It has a stainless steel bowl and browns. I set it to brown to brown the onions then add broth with additional ingredients and cook under pressure. I also use it on th rice cooker setting to cook perfect brown rice. It has a slow cooking feature as well as a steamer. It is listed on Protective Diet as one of my five favorite kitchen tools.
