I’ve created mini pies with the health benefits of oats. Why eat boring old oatmeal? Now you can have pie for breakfast! These are perfect for a special brunch or tea party.

Made an apple one and love the crust. Can not wait to try cherry, blueberry, and pineapple! Only a week into PD and the apple pie is plenty sweet.

I would like to put the Chocolate Chia Seed Pudding in the crust for mini chocolate pies. How long should I bake the crusts in a muffin pan? Would 10 or 15 minutes be long enough. Thank you.

I haven’t baked the muffins alone in a pan, so I’m not sure what bake time or temperature to advise. The chia seed pudding is not a very firm pudding. I like your idea, but I think it will be runny and wont hold up.

Does anyone else find that the crust bakes up very hard?

These are so good and very easy to make, too!! Tried the cherry today. Looking forward to trying some of the other flavors, also.

Finally got around to making these. Like the taste much better with the Erythritol in the crust instead of the Stevia.
Thanks for a quick and easy recipe.

My husband doesn’t like Stevia…how much Erythritol did you replace the stevia with and did you have to make any other adjustments to do this?

I would just leave it out all together.

Made these pies for our Christmas Eve family party and they were a huge hit with everyone. Have made them several times since – a perfect quick breakfast on the go 🙂

These were actually easy to make, especially if you’ve made one of the regular pies. I made the blueberry pice and these mini fruit pies at the same time. My husband like these better than the regular pie. I will be making these again
