This was the perfect meal for our first hot summer day. It doesn’t heat up the kitchen. I made it with fresh spinach and parsley from the garden and lemons I preserved way back in December! The whole family enjoyed this served with a salad, steamed broccoli and a hummus and veggie stick platter. Thank you for this light, fresh, cooling recipe!
This recipe (especially in the instant pot) is so fast, easy, and most importantly, delicious. The preserved lemons are wonderful!
I’m sure it’s great, but bummed there’s no way to make a lemon pasta w/out the month long lemon process.
