This healthy high-fiber disappearing bean salad is an organic plant-based upgrade of my mother’s creamy pickled bean salad. She always used dark red kidney beans along with finely diced onions, pickles, and herbs. Her pickled-up version was tangy and delicious, dressed with Hellman’s Mayo and sugar.
