This popular dish originated in Mexico in the state of Michoacan. Carnitas means “little meats,” traditionally made with pork and simmered for hours in fat until tender. I gave it my best protective makeover to keep the history of this dish alive while we evolve and eliminate the burden of obesity, diabetes, and heart disease. Jackfruit is disguised with a shortcut cooking technique that incorporates authentic spices. It’s served on homemade fresh corn tortillas and classicly topped with cilantro and onion in under an hour.
