I have fond memories of waking up to my mom’s potato pancakes topped with applesauce. She and I worked together to give them a Protective Diet makeover. We removed the oil and eggs and held them together using a burger press. Top these golden pancakes with applesauce and homemade dairy free sour cream or spice them up with Protective Diet’s King Sauce

if i want to make these potato pancakes ahead, should i make and refridgerate/freeze them BEFORE cooking, or after?

I think you might also be able to make these in a waffle iron.
How many pancakes does this make?
If you are using a burger press it will make 6 to 8 large pancakes. If using a mason jar lid to form them it will make at least double the amount.
I made these tonight for the first night of Hanukkah and we ate them with organic unsweetened apple sauce. Not only did they come out PERFECT [thanks to your mason jar lid tip, and blotting out the extra moisture} but they were delicious. I love that you can doctor them to your liking. My son added some organic sugar and a little salt to his and he loved them. We all did! Thank you so much!!
I just made these… They are delicious! Crispy on outside yet tender on the inside! Yummy!
I really liked these, both with homemade applesauce and with Sour Cream Dream!
