  3. This is a great, satisfying dessert. Perfect for the fall and Thanksgiving. I put my soy milk & chia seed mixture in the Vitamix with everything else as I wasn’t sure if I would like the texture of the individual seeds. It came out great with everything blended. Makes me not miss pumpkin pie at all!

  4. I loved this! I made a pumpkin pie pudding not too long ago, but I like yours better. The chia seeds are so good in it.

    Yesterday’s breakfast was your Gluten Free Blueberry Pie and lunch was your Pumpkin Pie Pudding. I never thought I’d see the day when I’d feel great about having pie for breakfast and pudding for lunch! Thanks for creating food that’s so delicious, fun, and healthy!
