My son tried this and absolutely loved it! He is SAD eater and loves the traditional pumpkin pie. He even said mom this is a nice replacement for the pie. Woohoo! This is a keeper!
Super yummy!! Great for lunches! & did you know when the chia seed gels like this that it’s great for cleaning toxins out of your body? Yummy & functional!
The gel like texture can help move things along in your digestive system, but when practicing a PD everything should be moving perfectly:)
I finally made this and I liked it a lot! Nice fall pumpkin recipe!
Love this pudding! I love desserts! This one is very satisfying and has wonderful flavors and makes you feel like you could possibly be cheating but of course you aren’t. You are just blessed with a wonderfully delicious recipe you get to enjoy without guilt!
This is a great, satisfying dessert. Perfect for the fall and Thanksgiving. I put my soymilk & chia seed mixture in the Vitamix with everything else as I wasn’t sure if I would like the texture of the individual seeds. It came out great with everything blended. Makes me not miss pumpkin pie at all!
Jennifer,
Thanks for blending it up and giving us this review! Your the best for posting all your reviews! Some people don’t care for the whole seeds. I on the other hand love the texture.
Thank you and Keep the reviews coming!
Best of Health,
Julie
I loved this! I made a pumpkin pie pudding not too long ago, but I like yours better. The chia seeds are so good in it.
Yesterday’s breakfast was your Gluten Free Blueberry Pie and lunch was your Pumpkin Pie Pudding. I never thought I’d see the day when I’d feel great about having pie for breakfast and pudding for lunch! Thanks for creating food that’s so delicious, fun, and healthy!
Denise,

Very good! I made it with mashed up sweet potatoes and it was just as tasty! Thanks for the recipe.
Love the sweet potatoes idea Marie! Will have to try this soon!
