    I made this soup in a hurry and a pinch without vital ingredients: I didn’t include the roasted tomatoes or fresh herbs; I just used some dried basil, and no parsley, and it was STILL totally addictive!! I can’t get enough of it, and can’t wait to make the proper version!!!!

    so delicious!! i used my immersion blender to blend it all up so there weren’t any chunks of tomato in the soup. i hate tomatoes but in soups somehow all blended up they’re delish! the seasonings were perfect and it was super easy to make.

    This soup tastes like it cooked all day long. Great flavors! The Crispy Garlic Croutons are perfect with it!
