Shaved Fennel Salad Premium PD Recipe

Fennel is a crunchy cool weather veggie seasonally served as a salad in spring and fall. Spring is in the air, and fresh raw ingredients are gaining my attention to expand our pallets and microbiome population with protective polyphenols and plant fiber diversity on a Protective Diet. As I transition from a winter wardrobe, I become my slimmest silhouette with a vegged-up seasonal plate. Fennel has a light licorice flavor often paired with a tangy vinaigrette and salty parm. I matched the traditional ingredients with low-calorie, fat-free, plant-based selections to assemble a satisfying protective salad. The raw crunch pairs perfectly with fresh wholegrain bread or a steaming hot bowl of seasoned brown rice to make this salad a complete meal.
