Sofrito is a blend of sautéed or roasted finely diced aromatic ingredients that are combined as a concentration of flavors used to build delicious ethnic dishes. It is popular in many cultures and varies with the use of red or green peppers, the use of tomatoes or not, and varying spices and herbs. This recipe is based on a traditional Puerto Rican version used to start a classic rice dish called Arroz con Gandules or to add to simmering beans. Many generations have passed since its creation and the flavor-building step to making modernized Sofrito that tastes like Abuela’s (Grandma’s) has been lost. Protective Diet is bringing it back and into kitchens around the world to celebrate the tradition of Puerto Rico’s infusion concentrate that is loaded with protective ingredients and flavor.

Wow! I have no idea why I waited so long to try this recipe but I’m sure glad I finally did! It was so flavorful and so fast and easy. I loved it and will make it a lot now! Thanks for another PD winner.

Haven’t tried this recipe yet, but when I make sofrito I would put it in ice cube trays that way I could take out the amount I needed. It is hard to break apart when frozen.
