In the winter, nature provides various mood-lifting protective ingredients. This recipe combines complementary textures and exciting bright flavors to boost our biome and combat Seasonal Affective Disorder. Seasonal produce offers specific nutrition to support our wellness and robust microbiome. This week’s PD-Ed lesson 354 will demonstrate how to increase raw and cooked plant fiber as we transition off cooling water-packed summer vegetables. This salad will feed your immune-supportive microbes winter plant fibers. They will digest them and serve you anti-inflammatory SCFAs, oxidative stress eliminating vitamins, and protective polyphenols. As your lower-level health directive microbes develop they will encourage you to make this high-fiber winter mix salad. Pectin is a favored fiber our resident butyrate producers will cheer for! When we chop and assemble their preferred fuel, they will reward you with dopamine and feelings of euphoria. This rewarding feeling ensures we continue to seek and prepare protective meals to support them with seasonal fibers. Dopamine excitement has our seasoned fiber-chopping PD community gathering greens and stocking their panty to foster a team of health directive resident microbes. They keep us buzzing through a restorative winter high on healthy living. A Protective Diet rewards us with slim, beautiful, healthy bodies to navigate life within. Each season naturally provides protective fibers necessary to promote a healthy community of nature within all of us. Feed and foster them and in return they will nourish you, their healthy host.

This winter salad is the best! The combination of the leafy greens and dressing is superb! I could eat this every night! It’s a great way to increase your vegetables. I have served it twice to two groups of people and there is never any left. Last night 3 out of 5 people went back for salad. I’d say that’s an accomplishment.
This Winter Mix Salad is Scrumptious! I love the inclusion of the raw sweet veggies, the sweet potato, (which I have never had raw before and I love it! ), the carrot and apple, then to add a tang and brightness, with a delicious Crunch of the pomegranate arils, orange slices and Rosemary Crunchies! Julie has added the exact right about of dressing and seriously, this is a Party in my mouth! I will be eating this winter salad all Winter!
