To make orange cake – I substitute oat flour for the wheat flour, change out the soymilk for 1/2 cup yogurt and juice from 2 oranges, add zest of 1 orange and bake in a glass pan for 30 minutes. I also like icing on this cake (I add zest from 1 orange to the icing recipe).

These are awesome with the chocolate frosting! Once in a while I think I deserve a real treat and I reach for one of these. I freeze the frosting in tablespoon helpings and the cupcakes. When I want one I just pull out a frosting and a cake and let them defrost! Thanks Julie…..a super treat.

The cupcakes are fabulous. I was out of pastry flour so I used 1/2 oat flour and 1/2 regular wheat flour. The cup cakes were light and very tasty. Will keep in mind do any snack urges which arise.
