Just made a double batch of this recipe for the first time today! Had a cucumber that I needed to use in the fridge so added that also. This is a wonderful, fresh tasting salad. The dressing really adds some zip without too much heat if that isn’t something you care for. Another winner from Julie! I waited too long to try it.
Excellent, made it tonight for a light supper, served over rice. Very flavorful.

I absolutely LOVE this salad! It’s one of the best recipes I’ve made from this site. Soooo flavorful! I suggest using fresh corn; the flavor is just too good in this dish. I might be eating this dish all summer long.
This was so good! I added a little bit of cumin because I love it, but otherwise followed the recipe. It’s hard to believe I ever used to make a similar recipe with oil; it’s so much better without it!
