Mustard is a member of the cabbage family. The seeds contain myrosinase, the enzyme needed for cooked cruciferous vegetables to produce the protective phytochemical sulforaphane. Hot mustard is China’s most popular condiment. In America, it is served with cabbage stuffed eggrolls. It makes me wonder if the synchronistic combination of myrosinase-rich hot mustard and cruciferous vegetables was for improved health or was simply exciting in flavor to the Chinese? Either way, it is serendipitous between nutritional science and delicious recipe remakes for protection on a Protective Diet.
