Might it work to use mashed potatoes on top?
Yes, you could sub mashed potatoes. I wouldn’t call it Tamale Pie. It would be a South Western Shepard’s Pie.
No, it didn’t sit long. I just think it was too much so got thick on top. I’ll put a little less on next time. It was really good other than a little dryness.

I enjoyed the flavors in the filling but the Masa topping seemed a bit too dry. Next time I might cut back on the corn flour a bit or increase the water to make it less dense. Did you have the same issues while you were testing the recipe?
No it should turn out with a crispy top and moist in the middle. One ideas to help trouble shoot: Did you let the batter sit for a while before spreading it on? This dough will dry out fast.
