- We can improve our food quality by using organic, fresh-milled flour:
– wheat germ is the part of the wheat kernel that contains natural fats and autophagy-promoting spermidine
– the germ component is removed from commercial whole wheat flour to keep it shelf-stable
– we can mill flour, as needed, to benefit from the whole wheat kernel with no risk of the germ going rancid
